Chef,
I'm looking for a couple of general purpose spice mixtures for chicken. I'd like to make a large batch and store in an airtight container on the counter, for convenience. I usually make grilled breasts for salad, pan roasted thighs, fried chicken, or roasted whole chickens. If there is one or two spice mixes that works for most any chicken recipe that would be great. Thanks |

Update. Surgery set for 3.27.17 Left knee this time. Hopefully next year the right. Hate this lay about bullshite  but light at the end of the tunnel.

Chef, can you give me some insight into sweet and sour pork?
I'm making this for dinner tonight, and most recipes I've been looking at, call for ketchup in the sauce. 
Ketchup as an ingredient worries me, but maybe it's legit. Thoughts? |

Do you have any suggestions for sauteing a big batch of onions? We're making a taco/fajita bar for 25-ish people, and I'm trying to figure out the best way to make all the onions. I think I have everything else scaled up, and a plan in place for getting it all done, except for the onions... Thanks! |
