I know we have a cooking forum but so many people asked SO many people "hey what's your recipe?" After last weekend's get together I thought why not start one in HTF ??
A couple Arfcomers are coming over and helping with cows tomorrow and I need to feed em so I'm prepping tonight. This is my version of AL Pastor, no it's not on a Gyro thingy deal and there is no pineapple but it's Pork, it's Red and it tastes awesome. Ok, ill try to get some recipes in here.
Mrs nottooslow's Pico - these amounts are an estimate. Sorry she just kind of does it without measuring. Tomatoes - 2-3 large Red onions - 1 small - med Jalapenos 3-4 deseeded garlic 6-10 cloves. Cilantro - 1/4-1/2 bunch Lime juice - 2 limes worth salt and pepper. to taste nottooslow's chili I normally just make Buckshot Jims recipe. LINK This is a great chili recipe. Really changed how I cook chili. However for Cheesecake con carne I used a Wagyu chuck roast (didn't make much of a difference if any that I could tell) and I used a couple different dried peppers I found at Central marked. Dried chipotle and morita peppers as well as the Ancho, New mexico, guajillo peppers. I also usually throw some ground beef in too. I started the process with bacon. I cut it into small bites and fried it crisp. Then fried my non-dried peppers and onions in the bacon fat for a couple minutes. I also browned / fried all the beef in the bacon fat. I remove most of the fat at the end with a fat strainer. Bacon goes back in when all the ingredients get put back in. Its not "traditional" but damn bacon is good in chili IMO. The chili I entered was too thin, I should have let it simmer on the stove for a few more hours. It should be thick. ETA: the judges all said none of the chili's were spicy enough. I guarantee that wont happen again. I wasn't sure how it would be judged so I held back. Next time it is going to get a couple Carolina reapers. |

Was concerned there may have been some "Snuggle Struggle" issues from your Big Pimp'n Pleasure Dome... Hope all is O.K. with your Mom & your have a Safe Trip. Looking forward to your Florida Shimp recipe. I thought Bubba knew everything that there was to know about shrimp... Anyway, like I was sayin', shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it. Today I attempted El Pollo Rico chicken tacos, not to be confused with Pollo Loco, Rico is Mexican and Loco is Peruvian.
I intend to try the Peruvian one day as when I Oogled and Utubed for Pollo Rico all I found were Loco recipes, it loo,s good, I just never had it before and we do know we LOVE Pollo Rico. We used to get it all the time in Austin, used to could get a whole chicken, rice, Charo beans, roasted onion, corn torts, green & red salsa, the whole schmear for like $12, it's $21 now with Brandon inflation Anyway, momma brought some home the other day and I just wanted more so I decided "hell it can't be THAT complicated", hah, it's alotta work. I did my best to disect the flavors and go I between that and what I found online, this is what I ended up with for a marinade. 1 1/2 cups White Wine vinegar 1 1/2 cups cooking oil 1 shot glass Paprika 1 shot glass Onion powder 1/4 cup minced garlic 1/2 shot glass salt 1/2 shot glass pepper 2 limes squeezed Puree all together and marinated for most of the day, cooked over Mesquite on the brick pit. |

It was gotdamn delicious, it was not Pollo Rico but I'm not ashamed by any means.
It was a little tangy, next time I would back off the vinegar a little bit and do 1 lime instead of 2, otherwise really close. And I want to try to make the green sauce, I may do that tomorrow. No, I take that back, after having seconds I realize it's the store bought green sauce that's too tangy, not the chicken I will attempt green sauce tomorrow. I honestly don't know what I could do to make the chicken any better. I'll keep trying though. |

Buffalo Chicken Dip
Want to be the hero at your next backyard BBQ? Bring this. The following recipe is enough for 6-8 adults to comfortably eat from. I'll include a bigger recipe for large groups. Prep the dish when you have time and pop it in the oven when you're hungry. 8oz cream cheese 1 whole chicken breast 1/2 cup buffalo wing sauce 1/2 cup ranch dressing 2 cups shredded cheese 1. Preheat oven to 350 2. Boil chicken breast in water until cooked, then shred 3. Layer ungreased baking dish with cream cheese, then the shredded chicken, then the buffalo and ranch. Sauces can be mixed together or added separately it really doesn't matter. If you are making this dish in advance of fully cooking it, make sure to let your chicken fully cool. 4. Sprinkle with shredded cheese. 5. Bake uncovered for 20-25 minutes until cheese is melty and serve with your favorite crackers Small foil pan size - This feeds a lot of people. Same steps as above, only sub more ingredients 3 packs of cream cheese 2 chicken breast 1 cup buffalo + 1 cup ranch 2.5 cups cheese |

Smoked Mac & Cheese
Mmmmmm another hero dish. Damn it feels good to be a gangster. Yes it has two types of corn. Yes you've probably never had mac and cheese with corn. Yes it's delicious. This recipe fills a small foil pan to the brim and serves 12+ adults 1 box elbow macaroni (1 pound) 1 block Velveeta cheese 1 can regular corn 1 can creamed corn 1 can of Rotel 1 pound of bacon 1/2 cup milk A sprinkle of seasoning like salt/pepper/garlic and/or your favorite BBQ seasoning Creative freedom - This dish lays the foundation for other stuff to be added based on how you feel. I've added pulled pork, brisket, etc to it...the more the merrier. Pro tip - Next time you make a brisket, carve off some of the flat and throw it in the freezer so you have some for dishes like this. 1. Cook whatever needs cooked such as the pasta and bacon. 2. Cube the Velveeta into 1" chunks for easier melting 3. Add all ingredients to your foil pan and pour the milk over last 4. Smoke on the pit for at least 45-60 minutes. If your pit is 200-225 it may take longer. Stir regularly |

Baked Bean Casserole
Today was a good day. Sweet and savory? Fuck yes. 1.5 pounds lean ground beef (turkey, venison, whatever) 1 white onion, finely chopped 1 bell pepper, cored, seeded, chopped 2 16-ounce cans of pork and beans 1/2 cup BBQ sauce 1/2 cup ketchup 2T spicy brown mustard 2T worchestershire 1T soy sauce 4T brown sugar 1 pound of cooked bacon, crumbled This is another dish that allows for creative freedom. Add brisket, pulled pork, or whatever other doodads sound good at the time. 1. Preheat oven to 350. Grease 9x13 dish with cooking spray 2. Sear the onion and pepper in a large pot for a few minutes until the onions are happy. You know what I mean. 3. Add the meat and and brown thoroughly. 4. Turn down the heat and add all other ingredients. Mix well to combine and allow 10 minutes to simmer and hang out. 5. Transfer mix to casserole dish, cover with aluminum foil, and bake for 45 minutes. 6. Remove foil, bake for another 10 minutes. Let stand 10 minutes before serving. |
