Looking for recommdenations for good hiking in the Charleston area. Somewhere a little more off the beaten path. I would like to do some overnight camping in the bush and practice some bushcraft.

Francis Marion allows dispersed camping:

Donnelley WMA doesn't allow camping.  There's a nature trail that's about 2.8 miles and other side roads that could take you further than that.  You'll see some monster gators on the Boynton Nature trail btw.

The coastal terminus of The Palmetto Trail aka Awendaw Passage is just north of Charleston. This passage starts at theh Intracoastal Waterway and is 7.1 miles long. It ends near Hwy 17 and then becomes the 47 mile-long Swamp Fox passage.

I don't know what type of shelter you had in mind but likely you cannot build something and then leave it (practice leave no trace).
