If you're close to Phoenix, and want to go, I'd be happy to go together. Not much to it, really, besides identifying the species in flight, knowing your lead depending on gauge and animal, and following the rules of the law. The hardest thing is finding a good spot.
Dove are very easy to clean and store. I breast them... meaning I don't pluck and such. One thumb right above the anus, with the wings pulled back. Insert thumb and pull up, and breast detaches from the rest of the bird. Peel off the skin, wash good, and put immediately on ice. Takes all of 30 seconds per bird.
Bring home, add butter, Oregano, a hint of lime and garlic, wrap in foil, and BBQ.
