I have a friend with an L1A1 that has a thumbhole buttstock. Can this be changed to a pistol grip/ buttstock or does it have to be left as is?

Yes.  The pistol grip stud is likely removed, so you'll either need to buy a new lower or buy a drop in replacement stud.  You'll also need to watch your US parts count, 6 without a muzzle device or 7 with.
