The old lady has an 1878 Charles Parker SxS.
Max's gun is either a Savage/Stevens 311A or a VG Bentley, sawed off. Most likely the VG Bentley. (note the white spacer on the butt cap)

I don't know for sure, but I have researched this for quite a while. I have read many makes for the gun and most are obviously wrong. What I came up with (for the Roadwarrior gun) is possibly the Stoeger Uplander with a modified forend. The 3 movies had 3 different shotguns. Thunderdome being the most obvious, because it had hammers on it. Here is a pic of mine. The pins in the receiver match, and I copied the forend. The only difference is the lack of a white spacer on the grip cap.
