Well, for comparisons sake, I'd say get a SAR 3, since it's .223, so you can directly compare it to a Mini 14. I had all 3 of the SARs, but sold the SAR1...just didn't like the way it shot, and I've got 2 SKSs already, one of which is the SKS-D that take the standard AK 30 rounders, so didn't really need to keep another 7.62x39 rifle around.
The SAR 3 is a great compromise...AK reliability in a gun you can shoot good qaulity ammo in if you want, Mags for these aren't as common as they are for the SAR 1 and SAR 2, but they're still plenty around.. If you do get one though, you need to replace the hammer...it'll peen the end of the bolt and the firing pin...I think the Red Star replacement is only $30 or so, and it's easy to install. For whatever reason, this problem was only on the SAR 3.
I stuck a Kobra on mine, and was hitting clay pigeons and soda cans at 100 yards all day.
The SAR 2 is a great rifle too, but being limited to Russian ammo is drawback imho. Still, no one expects these guns to be tack drivers, and they will shoot Wolf etc all day..they were made to do so.
Never had a mini 14, so I can't say anything about those.
