Is there such a thing as a single shot shotgun? I think a handy single barrel shottie would be a fun gun to have...Anybody know of any makers?

Baikal, sold through EAA does as well.  There are a number of other brands out there.  BTW NEF and H&R are both owned by Marlin.

While not good for much more than plinking and spruce chickens, Savage Arms makes a nice over/under rifle/shotgun combo.  One of my first guns was the 30c 22/20g over/under single shots.  It breaks down into three pieces in a leather rollup bag.  The current models don't break down but you can get them in .223/12 if desired.  A fun camp gun for sure.

The 30c is great for puttin in a rifle scabbard on the 4-wheeler and picking up dinner when you turn the corner into a group of spruce hens.

The H&R and NEF guns , are really nice and come in an insane number of calibers....

I have often found them for sale for around 80 dollars , can't go wrong there ....

Thompson Encore maybe.  I like the stock, and you could switch guages as the mood strikes you.

I "cut my teeth" on a H&R 12 ga. Topper model when I was a pup.  She still sits in my gun safe, just waiting for my son to become old enough.  I'd bet many an American kid started out with some version of a single shot shotgun.

I've got a H&R 12ga. I take with me when scouting before deer season.  They don't weigh much so you can carry one around all day.

There's only about a bazillion brands of single shot shotguns. They are cheap and easy to find.
