If something is a C&R and still NFA, what is different about the transfer and local LEO signoff etc? thanks

C&R FFL holders (type 03) may purchase C&R NFA guns from out of state dealers and individuals.

A C&R FFL holder can move C&R NFA guns interstate without a 5320.20.

Quoted:
The only real difference is that if you hold a C&R FFL, a C&R NFA firearm can be tranferred directly to you from out of state upon approval instead of having to go through a dealer in your state. All else remains the same.
In other words you still need the CLEO signoff, fingerprints, etc.

You could form an LLC / corporation and get a C&R for your LLC / corporation.

C&R doesn't chance the LEO sign-off/etc... All it does is allow you to cut out the transfer-dealer for out-of-state C&R MG purchases....

But with forming a TRUST essentially FREE, why would anyone do that anymore, anyway?

If you live in (or are planning to move to) Missouri, a trust isn't a viable option.  See this thread for details.
