I know Remington made a pistol in 1858, what was their last production pistol?

Nope, they made pistols into the mid-1930's.  The Model 51 was made until the 1934.  I'm not sure if it was their last handgun, but it had to be close.

The XP-100 is a pistol and it's still made.
