Is one a 'original Type 56' and another a replacement?  ...or did the Chicoms use different stocks on their rifles?

I notice that your sling swivel is underneith, while the one I got is mounted on the left side.

Stock on left is an Albanian replacement stock

on the right is a original Chinese stock.

But to additionally answer your question, keep in mind there wasn't just one Chinese factory manufacturing the SKS rifle.  You may notice slight differences varying from one Chinese SKS or AK to another.

The latest batch of "Chinese SKS" rifles is by way of Albania.

Several have shown up with Albanian stocks.

My own example has an Albanian bolt carrier.
