starting saiga 7.62 conversion soon, amassing parts, and need to know if i need a single or double hook fire control group.

The Saiga is setup for a single-hook, but you can make the cuts for a double hook to work.

With a carbide cutter in a dremel, I made the cut for a double hook G2 in less than a minute.  To me, there is just something unbalanced about the look of a single hook.

The Red Star arms looks good but the Tapco G2 comes highly recommended.

After trying my AR-15's tight single stage RRA trigger (about 5-8lb of force required) and my Vepr K's standard 2-stage trigger (feels like 4 lb for the 2nd stage, very light) I like the single stage trigger the best.

It's durable, cheap, and works fine for me.
I can't see myself spending upwards of $80+ to get a 2-stage trigger.

Make sure there isn't a round in the chamber.
Open the receiver cover, look down where the trigger sits. With the hammer uncocked, pull the trigger with the selector on FIRE.

Note how your single hook goes into this "groove" in the receiver. The double hook will simply require a similar groove cut into the other side.

Is there any accuracy benefit in using a double hook FCG?

No, but there is a less chance of trigger slap developing.  I'm not sure why though, perhaps someone else can answer that.
