What types/brands do you prefer? Why? Which are most reliable? Most accurate? I'm looking to purchase one mainly for plinking but would also like for it to be reasonably effective for home defense. I'm also thinking about putting it in the truck box for when I got camping and the like. Please, if anyone has any experience in handling/firing/owning I would love to here from you. If you have heard something good or bad on a particular type/brand let me know. Thanks.

Only choices you have for a 5.45mm AK are the Arsenal Inc SLR-105A1R or Romanian 5.45mm varient or a  Bulgarian kit build. The one I'd recommend is the Arsenal Inc SLR-105A1R, it already comes 922r ready, has a optic rail, has the bayonet lug and threaded FSB with the 24mm muzzle brake. Groups are an average of 2 inches at 100 yds. Ammuntion choices are Wolf or Barnual, being the most common available. Magazines are plentiful and cheap. There's Bulgarian and East German 5.45mm magazines. Recoil is very mild with the 5.45mm, accuracy and controllablity are superior over 7.62x39mm. Once you fire it, you'll love it.

Well, you have some choices:

Romanian SAR-2
Romanian WASR-2
VeprK
Bulgarian SLR-105
Tantal build
Krink build

They will all be equally reliable. The Vepr will probably have the accuracy edge. I have heard that Tantals are not that nice to shoot, but I have no personal experience.

As an entry into 5.45 and plinking you should probably go with the WASR-2 for about $330.

Would you guys recommend that I buy a complete rifle (prebuilt) or build it myself.  I have never built any firearm but I do have limited metal and woodworking skills and tools.

Get a Tantal kit and build it on a good receiver.

Where would you recommend I purchase the tantal kit, and which receiver would you recommend?

Greentimber will sell you one, or you could wait a year until January 2nd and look at the EE-it will be flooded.

Yup. I'm trading my 2 AK kits for a SLR-95 in the EE, one is 5.45 and the other 7.62...

One thing you can do with the 7.62 that the 5.45 can't do as well is shoot bears

fortunately the only predators I have to worry about is feral dogs, coyotes, and alligators.  Two you can throw rocks at to scare off, the other you're just screwed if caught off guard.

Maybe if you run into a lake-placid sized gater !

5.45 will work wonders on dogs and coyotes, just use Softpoint. Buddy of mine shot a feral dog with his AR15 and ball ammo straight through the shoulders...it took off running and was never seen again.

Have you ever been to the bayous of southern louisiana.  We went on a 3 day canoe float and had alligators the size of our boat come along side of us.  We had to stop paddling to avoid hitting them.  I will keep in mind the softpoint rounds on dogs though.  The slr 105 in the pictures above looks great.  If you don't mind me asking about how much did that run?

If you get the one with sight rails, does it accept optics that would go on an m4 a3.

You would need one of these.
