Hello

I'm new to Ak building and got a few questions. Ive been doing a lot of research and thought I read somewhere that I dont need a barrel press if I'm doing a screw build, is that right? Having to press the barrel sounds like something I dont want to do. And I hear some kits require it and some dont? Would the centerfire AMD 63 kit be a good one to start off with? I am going to finish a bent blank for the receiver.

"Lightning" is right, If the barrel is already set in the trunion you should be good to go.
Headspacing (should) already be set by the manufacturer. If using screws to build, don't foget to use loctite to set the screws.
Just incase, I would still check headspacing before firing the weapon.
