What are some benefits and drawbacks to each? I notice Nitride is usually cheaper, does that make it inferior?

The drawback I can think of is both usually cost more and phosphate chrome lined works as good as anything.  clean your stuff after you use and neither of those are needed.  Your money your choice.

Either work well, but as with any bolt, lube and clean regularly.

Agreed, will say the one Nitride I have does just wipe clean easily but really isn't worth paying extra for in the end.

Agreed.  Trick coatings are not necessary.  Perhaps hard chrome instead.
