Would storing 20 or 30 round magazines be advisable if fully loaded for time periods in access of two years?  How long before the springs would get stressed?

you should have no problem storing ammo in the magazines,  new springs don't take a memory.  (insert urban legend here)

Don't worry about.  Springs don't weaken from storing.

Springs wear out from the stress of being compressed and being released - ie loading and unloading.
Nothing to worry about.
Load up.
