I just purchased some steel targets and am wondering if soft point 223 ammo would be the best at damaging the targets-what do you think?

As long as it is good quality AR400 or 500 it should take anything.  The farther out, the less the damage.  I set my AR500 plates up at 300 yds, and cant make a mark on them with lead core bullets.  The M855/SS109 leave the tiniest divets in them.  

The closer they are, and the faster the bullet, and the milder (softer) the steel, the more damage will be done.

That is what I use - and that can handle pretty much any .223/5.56 made.  I will pock mork if you shoot it with high velocty stuff at close range, but you really shouldn't be shooting steel with a high powered rifle much closer than 100yds anyway.
