Oh my God, this is so easy to answer.  Keep the pistol and upgrade the AR.  All you have to do is get another upper and upgrade that puppy all you want.  To swap out just put on the rifle upper, throw on a butt stock, and you are good to go.  On the pistol use the buffer tube that goes with the stock you want to use then after you put on your rifle upper throw on the stock, it is that simple and totally legal, just don't put on the stock until you have the rifle upper on there first.
Then when you want to go back to pistol, take off the stock, swap out the uppers and go have fun.

If in the process of converting to a LEGAL rifle configuration, or back to a LEGAL pistol configuration, the order of assembly does not matter.

PS: same applies when putting together a rifle, which means it could be a pistol (no buttstock) while in the process of becoming a rifle...
