I want a rig that I have to fumble with as little as possible. I want to have one plug that if I find a power source I can plug it in and when I have to leave, just unplug and walk away with the radios ready to go. First, do I have too much power supply with the Samlex? Next, what batteries do I need? Finally, am I missing anything? I know very little about this and I am trying to learn.

You're not going to get a lot of battery capacity for 10 pounds.  A 12V 18 Ah sealed lead acid battery weighs about 12 pounds.  How long it lasts is highly usage dependent. Without doing the math, you're probably talking about hours not days.

The 35A Samlex power supply is overkill for your setup but if you've already got it, use it.  The extra current capacity won't hurt anything.  Be sure to fuse your connections properly however.

I don't think you'll find a hand crank charger useful.  The amount of energy you can extract from a human is pretty low.  Invest the money in more solar panels.

Gotcha. I am pretty stout and I can do 20 pounds fine. I am packing the radios into a frame inside a Kelty backpack.

As for the hand crank, I get that, I'm just trying to have as much as possible. Do you think I could make enough for ssb or cw?
