Does anybody know how to make their own spice mixture for curing sausage?  I know I can go buy the pre-packaged stuff, but I am talking about having the bulk ingredients on hand and being able to do this for SHTF situations and for general cooking.

I have for italian sausage and other fresh bulk sausage, there are lots of resources online and several good books, like "Charcuterie" by Rullman and Polcyn or "Great Sausage Recipes and Meat Curing" by Rytek Kutas.
