i looked to see if this was a dupe.
i will post pics when i get home from work.. so far i have put up: CORN - 72qt bags (frozen, cut off cobb) BEANS - 24 pints (half-runners, canned) 6 pints (peanut beans, canned) more stuff ready in the garden everyday. this is all i have put up so far. what have you guys done so far?? -Tim |
In an attempt to learn how to use the new canner, I've done 10 pts of strawberry preserves (no sugar added for dietary reasons) and 6 pints of browned ground beef.
My garden is too small to produce enough to put up; it's still in experimental stages. What little it produces gets eaten. -sgt_seti ETA: oh, and I dried 4 large yellow onions in the dehydrator and then ran through a food processor with the chopping blade. It made about 1 C of onion powder. |
i just picked a dozen more corn. gonna put it up this evening.
after i get done gonna go pull the rest of my beans up so i can re-plant. |
so far 30 jars of corn (yep canned) 24 jars of bluelake green beans
18 pints of blueberry jelly and 12 pints of blackberry jam. more beans and corn ready will get them tomorrow. |
WOW! You guys harvesting already? I'll let you know IF our garden survives this year. we will harvest around sept. oct. everything all at once. Im checking out buffalo, will bottle up a bunch its great!! looking for sheep and lambs, deer of course. But all the fruit and vegees hmmmm will have to look around see what we can get. Flour sugar and such. Yes, time to make a list. bullets, brass, ammo, guns, and MATCHES.

Parents have put up 70 smoked king salmon and we are waiting for berries to ripen. But it has been cold so the are going to be late if any at all. Frozen salmon in freezer.
Will not be able to moose hunt this fall so all that meat is out. But bird season is in September so just waiting. |
50 something ears in the freezer with several hundreed in 4-5 weeks if all goes ok.
Damn wish I had enough space in the freezer to put some up on the cob. |
20+ pints of black raspberry jam
20+ pints of zucchini relish 12 quarts of pickles 15 bags of zucchini in the freezer (doing more today) beans, beets, peppers, egg plant, tomatoes, more pickles, grape jelly, and corn are on deck for the coming months. Also have a ton of squash's getting ready. Will store a bunch of them and process a bunch of pumpkin pie recipe to freeze. |
We got nothing here.
Everything seems to be late......I'm expecting August to be a very busy month on the Feral homestead. |
Nothing planted at all this year. Too much spring rain. What little that was planted died from too much water. Really makes me mad due to mom wanting to can this year and having someplace to put up the jars for the first time this year.
so far 78 qts rattlesnake beans,37 pints salsa,26 pints crowder peas, 27 1/2 pints peach preserves,10 pints peach butter, 14 1/2 pints buueberry jam,15 1/2 pints of blueberry/lime jam, 7 qts blueberry pie filling,38 pints carrots, 16 pints rabbit meat,16 qts rabbit broth,
7 pints of strawberry jam. 7 pints of raspberry jam. 12 pints of apple butter. 2 gallons of dried sweet onions. 2 gallons of dried apples.
We are planning on pickling some okra, cucumbers, and maybe canning some mushrooms later in the year. We also have quite a few frozen berries ready to be put in bags/containers and put back in the freezer. (We freeze them flat on a cookee sheet with freezer paper. Then put them in bags/containers. This seems to help keep them from "clumping" together, and makes it easier to take out only what you want to use). |
Added another14 qts of white half runners and 6 pints of bread and butter pickles.
8 pints cherry jelly, 4 quarts cherry pie filling, 2 gal cherry juice, (lots o cherries this year!) 14 qts Green Beans, 18 pts Green Beans so far.
More Grean Beans on the way, waiting on the corn, apples, pears, cucumbers, onions, jalapenos, garlic, tomatoes, pumpkins, oregano and peaches yet. |
9 more pints of half-runners tonight..
tomorrow gonna finish the peanut beans. then we have to replant. |
Thanks in large to my brother who bought me Canning for Dummies for my b-day, I'm putting up 30 pounds (a bushel) of green beans and 10 pounds of blueberries.
Will have them finished be weeks end. Yes, my brother is the greatest! Dean |
A neighbor has a lot of asparagus and has been giving it away. I've put up about 20 pounds.
My garden hasn't come in yet thanks to the cold, wet spring. It looks like the peppers and first tomatoes will be ready next week. |
I didn't think about making onion powder with my onions. First off, I'm growing Walla Walla onions, are they okay for powder or does it matter and also, how long will the powder last and how long did you leave them in the dehydrator for? Thank you |
Me too. I'm as far north in VA as you might get so I reckon it's not too much different from you. My first tomatoes are just now coming in. And the blight is going to take out that patch. August is going to be sauce month...should have a mega buttload of roma's coming in. |
We've got about 80 Roma's in the ground.......Mrs. Feral told me last weekend that she had an honest-to-God nightmare that they all came in at once. |

we have put up 110 qts of state halfrunners,32 qts pickled beets, only 6qts of tomato juice(just starting to come in),vac sealed & frozen 2 bushel of roma2 beans,21pts of peach jam,25pts blackberry jam and froze some for 5 cobblers. Our corn will be ready to pick in about a week. Almost forgot 10pts strawberry jam.

We're up to 96 qts of green beans and i'm sick of picking em. Picked the first few ears of corn today and it looks like we will be hitting it hard by the weekend and field peas in a week.
I've never done any but I am going to give a try to some dill pickles this weekend as well. |

18 Pints of sweet pickle relish
3 Pints of dill pickle relish (I don't like this one as well) 6 Quarts of tomatoes in the freezer, we will wait for cool weather and do all the salsa and sauce at once. My wife has vaccume sealed and frozen about 3 cubic feet of long beans, eggplant, and snow peas. Some separately and some pre-measured and mixed. Garlic looked like it was growing great but was a bust, as well as the squash and zuchini. |
Thursday morning we are putting up 30 pounds of Blue Lake green beans.

It's been a slack year for canning. Everything was affected by the June week of 100+ temps so we've done the best we could this year. Only one more canning of beans and maybe one more canning of tomatos and that will be it for the year. Here's the inventory so far........
Salsa - 21 quarts, 26 pints Whole tomatos - 14 quarts Stewed tomatos - 14 quarts Tomato sauc - 26 quarts, 14 pints Bush beans - 14 quarts, 14 pints (may have 14 more quarts this week) Dilly beans - 13 pints Cucumber relish - 7 pints, 12 half pints Squash pickles - 12 half pints Beets - 8 pints Corn - 15 pints (given to me by a bud) Squash - 14 quarts Zucini - 10 quarts stewed, 20# grated and frozen Okra and eggplant still running wild thank goodness. Fried my last yellow squash Sunday (very sad day when all the squash are gone). Bell peppers have finally decided to produce and I'll be picking them until frost. Sweet taters should be ready to dig by the end of the month. |
Slack year? |
LOL Feral.................had it been a good year I'd be taking vacation just to process the stuff
First planting of beans was destroyed by the hot weather which cost me probably 40 quarts. Everything else was stunted and took a month of babying to recover. Then came the bugs and diseases. I'm getting calls now asking if I want to come over to this person and that person's house to pick the rest of their tomatos..... I planted 24 sweet tater slips this year........first time for me on the sweet taters. If the vine growth in my front yard is any indication of what's underground I'll probably have enough to feed the neighborhood Plus, now I've got a dozen chicks that are 5 weeks old.......I'm getting crazy in my old age. |
We're at that point too.........giving the remnants away.
Cool. Layers, i presume. What kind did you get? Are they all pullets? We have 5 buff orps, 5 black sex links, 5 New Hampshire reds and one barred rock. They're about 13 weeks now and I'm hoping they start to lay before cold weather. |

Toted up our canning this year:
38 pints pizza sauce; 56 pints red sauce; 16 quarts soup base; 45 quarts basic tomato sauce; 4 half-pints red pepper paste 57 quarts of applesauce Not much variety this year--next year we'll try to broaden it out a bit. |
Nice, is the soup base a stock? If so, are there any additional prep steps. |
How are you guys putting up the Bush Beans - besides dilling them? JJ |
Standard green bean canning per Ball Blue Book......water, salt, pressure can.
Last twenty quarts of bush beans canned tonight. That's all the canning for the year unless I get enough sweet taters to can. Ball book recipe for sweet taters is pretty simple.
