Just wondering if there are any specific buckets to use when storing bulk dry goods such as rice and beans.  Are there food grade types, or do they sell specific liners?  I want to purchase a few of those snap rings and screw caps to put some buckets away.  I have a few co2 tanks from paintballing with a remote line that I could stick in there to displace the o2.  I didnt know if certain buckets had the BPA type stuff in them or if I am g2g with homer buckets and some food grade liners.  Any links would be appreciated as well!

If you use mylar bags to seal up your food, then any bucket should work.  

I used new homer buckets.  

HD sells a food grade bucket but it is more expensive.  

I figure the Homer bucket is just a container to hold my mylar packed stuff.  

I would only worry about food grade if I were dumping the food directly into the bucket without a mylar bag.

How much are the homer buckets, and do they come with a lid?

I think they were 2.39 for the bucket and 1.19 for the lids.

I actually bought the Lowes brand of buckets. But same as the homer.

if i go with the mylar bag option then ill get the homer buckets+lids.

anyone have a source for cheap mylar bags?  What is the best size/dimension for standard 5 gal buckets.  What have you found is the best way to seal the mylar bags?

$4.99 flat rate shipping on orders for O2 and mylar. I've used 1/2 gallon up to 5 gallon sized mylar bags. My choice depends on what I am storing.
As far as sealing the bags, I use a 2x4 or dowel rod and and a clothing iron that my wife hasn't figured out how to use in the past 20 years.
There are some youtube vids out there you can google to get the idea.

Edit: Gamma lids are a waste of cash IMO. You can reuse the gasket type lids and they are only $1.50 each from Lowes.
Just get the ones produced by Encore. Supposedly, all white plastic lids and buckets produced by encore are food grade.

I see a couple of problems with your initial plan.
If you put the food directly into a bucket, displace the O2 with CO2 and put on a lid, there is no way to tell if you successfully displaced all the O2.

Another problem is that the plastic is permeable.

Using a Mylar bag solves this problem, you can see that the O2 has been removed as the Mylar sucks down,
and you can always open the buckets periodically and check them.
If the Mylar is no longer sucked down, then you have lost your seal.

Gamma lids are a good item to have to put on a 5gal bucket AFTER it is opened and you begin using the food.
Their purpose is to allow you easy access to your food.
You don't need easy access to food that your are storing long term.

We use a gamma lid on a 6gal food grade bucket to store sugar in our pantry.
We re-fill our inside canister when needed from this bucket.
Yes you can remove and replace the regular lid, but the gamma lid makes life easier.

As for sealing, I use a clothes iron and a metal level.
