AZ has a minimum length law of 26" for rifles.
A underfolder AK measures 25" with the stock folded. Am I missing something, cause I've
seen lots of folders in AZ

The federal law states that overall length must be 26"; are you sure AZ has it's own law on the subject?

BTW, under federal law, the overall length is measured with the stock *extended*, not collapsed.  If AZ has its own law, it may or may not be the same.  The PRK requires 30", and measures with the stock folded/collapsed.

ak folders are legal in az.

azs gun laws pretty much are if its legal fedarly is legal state wise
