I have recently rediscovered them after getting some in NOLA at a diner .

Salt and some ketchup are good, but I am looking to branch out now.

Make this , with a dollop of sour cream on top


Tater-Tot Quiche Casserole
cooked tater-tots, enough to generously cover bottom of a 9-inch pie plate
6 slices of cooked bacon, diced
5 eggs
1/2 teaspoon black pepper
salt to taste
1/3 - 1/2 cup shredded Monterey Jack cheese

Grease the pie plate and line with the tater tots. Beat the eggs together. Add the most of the bacon to the beaten eggs, reserving just a little to sprinkle on top later. Add the pepper and salt and mix well. Pour the egg mixture evenly over the tater-tots. Sprinkle with the shredded cheese and remaining bacon. Bake in a 350 degree oven for about 30 minutes or until a toothpick inserted into the center of the casserole comes out clean. If you want to brown the top, place under a broiler for a few minutes.

Serves 4.

I like them, and so does the Duggar Family:

TATER TOT CASSEROLE
2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large cass. dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
(One of Daddy’s Favorites!) Makes 2- 9”X13” pans

My wife's delicious tater tot casserole...

1 lb ground venison, brown in skillet
(1) can cream of mushroom soup, mix with burger put in 9x13 baking dish
COVER in American cheese slices
COVER in tater tots

Cook in oven on 400 or so until tots are browned.
Salt, pepper, smother in ketchup and when done go "Son of a b I shouldn't have eaten all that...."

I freaking love tots, but hundreds of school cafeteria meals have made me quite the connoisseur- a tot has to be prepared correctly.

Grease to cold =  soggy tot
To long in grease =  rock tot
To short in grease = fluffy tot

The perfect tot should be slightly warm, and golden brown- when you bite on it there should be the slightest hint of resistance and the an explosion of fluffy shredded potato goodness.

that is a fine example of the art that is tater tot manufacture

My wife loves me, and is aware of my affinity for tots- she gets the ORIDA pre-made tots meant to be oven baked.  BLECH!  I would dutifully eat them, as I hate to reject something done out of love.  It's gotten a bit better since she got a baking stone that goes in the oven versus doing them in the toaster oven.
