How far from the ceiling are the sprinkler heads supposed to be?  In other words, what is the maximum distance they are permitted to be under NFPA 13?

If it matters, this is for a supermarket with open steel web joists under a corrugated steel deck roof.]

it depends on what kind they are, and their operation.  Pendant type tend to be closer to the roof deck than upright ones.

The piping for the lines is below the joists, so they would have to be standard, upright heads.  Someone with NFPA 13 handy, please look this up for me.  I am at work right now and do not have this information available.
