It is called an Egg in a nest. My wife makes them every weekend for our kids and they love it. Its generally the only way we can get the little one to sit still for breakfast.

Amazing how many different names there are for the same breakfast item!
But I still think that Mama Joad's mention of them in 'The Grapes of Wrath' is the ultimate authoritative source of the name 'toad in the hole.' Not to mention that its the same as my mother used! BTW, my mother's uncle, Judge Val Stentz, was the longest sitting Judge in Louisiana history, being the City Judge of New Orleans from 1908 until 1948. In 1943, he performed the marriage ceremony for John Steinbeck (the author of 'The Grapes of Wrath') and his second wife, Gewndolyn Conger, a Hollywood singer, at his office in the present day Louisiana Wildlife and Fisheries Commission Building in the French Quarter. Okay you guys. I had just finished a good sized lunch before I read this thread for the first time. But after posting and watching the thread, I decided I would forget about it by supper time.
You guessed it. I just went to the kitchen and whipped one out. Damn. If I had just eaten lunch I would have made 2 or 3 more. I've got some left-over soup in the 'fridge. Think I know what's for supper tonight. [:D] |

My Okie family always called them "One-Eyed Gypsies." (I had to call my mom at my grandparents house just now, as I couldn't remember.) Our New Zealander friends called them "Boxed Eggs." I haven't had one in about 20 years, so I'll have to make them tomorrow.

Wife makes 'em all the time. She calls them "Bird's nests" They're DAMN tasty. I tried making them once. Egg yolk everywhere. I can't make eggs over-easy either. I think I need a new pan. One of those cool non-stick slippery ones.

Got up this morning to spend the day on a mountain. Trip got cancelled so I woke up my girlfried and asked her what she wanted for breakfast. Sleepy-eyed she said, "I dunno, eggs, toast and coffee?" So off I went! Brought back two Hun Cakes and she put some in her mouth and said, "what is this!?" "I've got to tell my mom about this!" "These are great, can you make some more for dinner tonight?" I couldn't believe she had never had them.
BTW: They are listed as "Eggs in a nest" in 3 cookbooks I have. |
