I shot a nice doe on opening day of firearms season last fall with my old Sako in .243.  The 100 grain soft-point bullet entered through the left shoulder blade, blasted a rib, took out the top of the heart, went through another rib on the other side and was found under the hide.  It did the job very well, as it always has.  Like I do with every deer I harvest, I sliced up the heart into strips right away, battered and fried them up withing a couple hours, tasty!






I decided to cut it up myself for the first time.  I watched a few youtube videos, they made it look a bit easier than it ended up being.  I'm sure I'll get better at it after a little more practice.  I ended up with about 65 pounds of meat.






So today, here we have a few cuts from the front shoulder, I believe.  Not sure what type of cut it would be called...I call it shoulder steak.  I soaked them overnight in milk, then coated with a pecan and black pepper dry rub.



CZ P-01 in OD green with a Streamlight rail-mounted light and reloads, in case the lights go out.












Cooking the venison on the Aussie grill(that I just love), with a Kel-tec Sub2000 and reloads to protect against the crazy-wild stray cat that's been hanging around the farm.

Full table setting.  Midlength carbine with reloads, along with the Kel-tec and P-01 and my CRKT M16-13T daily carry knife.  My new favorite "everyday" beer, Bud Select to wet the whistle and of course, a napkin.
























Close-up on the meat and bacon-topped baked potato.  No veggies tonite, this took enough work.









Mmmmmmm...it was good!!

i got a young buck last season and for some reason he's been tasting real gamy..  kinda turning me off of venison for awhile..   dont want 80lbs of meat to go to waste

might do up some straps tomorow

I cooked up a 4 year old backstrap last fall(forgot it was in the freezer) and cooked it this way:  Try putting it in a ziplock bag with some italian dressing over night.  Then throw it on the grill on high heat for a few minutes on each side.  It came out real gooood.
