What are they for?  Can I use them to load up magazines quickly in the field?

yep, that's what they're for.  Also M1A's have a stripper clip guide on top that allows you to charge a mag in the rifle with 4 stripper clips. To load a mag outside of the rifle you also need a spoon, which is a stripper clip guide for the mag.

You can also use them with HK mags with a clip guide, and on FAL mags with either the clip guide, or the stripper clip topcover in the rifle ala M14.

You can also use them to hold your loose ammo of the same head design, like .270, .243, 8mm, 7mm, .45acp, etc.  You may or may not be able to use the clips to load a mag, but it keeps all those loose rounds together.
