Got 2 deer this Monday and I quartered them both up and finished vacuum packing one of them.

I was going to finish cutting up the rear quarters of the other one after work tonight, but she just called and told me it's all done.  She vacuum packed and labeled the bottom round, top round, bottom butt, and other cuts.  She also finished grinding the scraps into burger!

Just had to brag a bit.  Here is a recent pic of the wonderful lady at a dept. picnic. She's Thai.

The kangaroos are in Austria, up the road.  That's a wombat.  They're all over the place in Italy.  Can't drive anywhere without running over them. They make nice hams, though.

Nice catch on the wife. Not many want to do any game processing. My wife and mom like to cut up meat anything from seal,birds,moose and bears.

Mine just does not like seeing the head being cut off.  Once it is all quartered and on the kitchen counter, she will dive in like a pro.

She grew up in Thailand, and people over there just are a lot closer to the realities of life and food.  So many people here in the US ignore the fact that an animal has to be killed just for them.  They only look at a nice cut of meat on a Styrofoam tray and push the thought out of their mind what actually had to happen to that animal.
