So I throw a salmon filet on the grill and walk back into the the kitchen to prep the rest of the dinner.

Out of the corner of my eye, I catch MOTION on the plate that the salmon was on.

i brought some monk fish with worms from a local kroger, nasty as fuck... i haven't eaten monk fish in 10 years now.

Nothing to worry about. If the little nasty was still alive then you had some very fresh Salmon.

I catch a metric shit ton of Salmon in the fall and most of them will have those worms in them. Most of those worms are in the guts but they are also in the meat.

 That fish is good to go...

Salmon, being a fresh water fish, often carry parasites. When a good sushi maker prepares salmon sushi (raw), he must carefully examine each salmon fillet for parasites. Usually, Japanese are reluctant to eat salmon sashimi or sushi for this reason.

I believe what you are seeing, is a parasite from the raw salmon. If the salmon is well cooked, the parasite will be killed and it is safe to eat. However, anything that touches raw salmon {such as your dish) is potentially contaminated with these parasites. Please be careful about washing your hands, dishes, etc.

Other fresh water fish (e.g. catfish. etc) also have a possibility of these parasites, and must also be eaten well cooked. Hopefully you also know about the risk of parasites in pork.

As long as you are careful about cleanliness of preparation, and make sure you cook fresh water fish, pork, etc. well, you should be able to kill all the parasites that come with the fish or pork.

ETA: +1 on previous post. You are GTG just make sure you maintain good hygiene, and cook the salmon well.

I know that there are always some sort of creepy crawlies in our food, but seeing it like that was pretty nasty. That was one active worm.

It is a Codworm.  They are pretty common in fresh fish and especially Salmon.  The bigger the fish the greater the chance of it having worms.  Grouper especially.  Hold the filet up to a bright light and you can see the tunnels and the worm that bore them.  In restaurants, we would just cut them out (perfectly ok by the FDA and the health department).  

You can get sick eating uncooked meat that has a worm or two.  Nothing dangerous, but nausea, upset stomach, headache etc... will be the result.
