Remember, brand of Shoyu can be a big factor in outcome. I find Kikkoman and Aloha brand shoyu to work the best for me. Here's a simple Teriyaki Chicken recipe:
Bake: 325 degrees F
Time: 1 hour
3-4 lb. chicken thighs or drumsticks
Sauce:
3/4 cup shoyu
3/4 cup sugar (I like brown)
2T sherry (optional, I don't do it)
1T sesame seed oil
1T sesame seed (you can get by without it)
1 clove garlic, minced
~1.5" piece ginger, crushed
1/2T MSG (optional)
Mix all ingredients. Soak chicken ~4 hours or overnight. Don't let soak any longer or the taste will be too overpowering. Bake in shallow pan. Turn pieces over and marinate with sauce. Ten minutes before turning heat off, pour rest of the shoyu mixture. Serve with chopped green onion and Chinese parsley.
If you have a hard time finding some of the specialty ingredients, you'll get by just fine with just the shoyu, sugar, garlic, and ginger. You can also add a little (1/2 cup) of water to the mixture if you desire a more diluted taste.
