OK...I love BT's.  How do you eat yours....?

I love them like this:

Tortilla with a thin spread of refried beans
One scrambled egg
Shredded cheese-not too much
2 strips of bacon
Med/Med-hot sauce

One of my favorite breakfasts!

Cool vid.  Those would be more like dinner tacos for me, but they look great.

eta I like my edible tacos with Chorizo and some Chipolte peppers with the adobe sauce in mine.  Top it off with some fresh Cilantro

It's not a breakfast burrito without Chorizo!!!

Chorizo, a little bit of rice dumped in to absorb the grease and fat, then a couple eggs scrambled in, scoop it all into a tortilla that's been heated over an open flame, add some shredded cheese, and then drip hotsauce onto every bite before eating...

man, I think I know what I'm having for dinner tonight...

Always been a big fan of sausage egg and cheese.

When I lived in Texas many moons ago, my best friend was of Spanish decent.

He would cook up a large quantity, freeze then, then we would nuke a couple before  going to work.

Great hangover food.

I still keep tortillas in my kitchen all the time, use them more than bread.

Just hard to find good ones here in the backwoods hick state of east TN.

Best breakfast burritos in the State...guaranteed:

From Diego's Burritos in San Angelo, TX

Beans, chorizo & egg. and cheese. Their stuff is made fresh every day. They start the hotsauce at midnight every day.

You'll walk across town to get a sack full of these.

Yep, it's one of many refinements we brought with us from the homeland to Aztlan...

that's about it.

I avoid chorizo, the only company around here that makes if for mass distribution goes in to way too much detail on what cuts go in.

I'm into bacon...and not big on the potatoes.  The chorizo is fine with me...but I don't wanna know what goes in it.

That med/hot sauce makes them a breakfast treat.

Isn't that like pulling apart the bread on a grilled cheese sammich? Not that I haven't done it, of course...

I find it interesting how Texans love there breakfast tacos.  We were at the Gulf this last Dec.  It seems like everyone sold them.  Even the Donut shops had them.

Over here in AZ we call them breakfast burritos.

As for the OPs question,  I like sausage, eggs, cheese, and potatoes.

Corn tortillas, heated slightly over an open stove flame.

Chorizo, scrambled egg, and cheese.

Top with some homemade salsa made with serrano and a little habenero peppers.

Beer chaser, and you are good to go.

This is from a dinner pic I made a while back.  I'm not from Texas and it's not a taco, but it tastes pretty darn good.

Jimmy Dean Sausage, Egg, Kraft Mexican blend cheese, green bell peppers, onions, salsa, sour cream and hot sauce.

Papas con huevo

Barbacoa

Carne guisada con frijoles y queso

Any of the three, preferably all three BT's make a great breakfast!

2 large eggs
1 banana pepper
1 jalepeno pepper
1/2 table-spoon hot salsa chunky
1/2 table-spoon green salsa
portobello mushrooms
2 slices of pepperjack cheese
some diced ham
2 whole wheat wraps

just perfect it has a little bit of bite to it but it is by no means overwhelming even for those who do not prefer spicy food.  by far my favorite breakfast, I eat it every Saturday and Sunday morning.

No they are tacos.  Some folks ain't figured out how to roll them up yet, and for some rolling them up in the morning is too much work.  that last category should probably be hitting the menudo instead.
