How can you tell if meat has been freezer burned?

Yep.  Tastes like shit after you cook it.
Actually, yes, you can.  Turns dark, resembles an intermediate stage of jerky.

yes, often dark, looking dry, almost brittle. the smell is a dead giveaway....

Yes.  If still frozen, the meat will have frozen water crystals on it and will smell --well, like your freezer.

If the meat is defrosted, you will notice a large amount of water in the packaging(depending on the size of the piece of meat and type).

Usually gets a tannish cast to it,and a definite smell.
Trim,and marinate.
