Get some boneless skinless chicken breasts. I used 6 of them for this recipe. Beat them flat between two pieces of saran wrap until they're about 1/8" to 1/4" thick. Cut them into strips about 2"-3" wide, and however long they end up being. Marinade all of the strips in any generic italian salad dressing for a little while. While the chicken is marinating, get some toothpicks and soak them in water.
Meantime, seed some fresh jalapeno peppers, and cut them into strips (I got 6 strips out of each pepper). Once the chicken has been marinading for an hour or so, wrap a pepper strip with one of the chicken pieces, then wrap the whole thing in a slice of bacon. Skewer it with a toothpick. Repeat however many times.
Build your fire and grill em till done, maybe 5-8 minutes per side? Cook em till the chicken is done, and they're ready.
Filling, DAMN tasty, and Atkins friendly!
