I am caught under an abundance of tomatoes.  I am looking for a good salsa recipe(s), and I like it hot-very hot.  

Sorry if this has nothing to do with guns.

If you like really hot, go for habanero peppers. Substitute them for any recipe that calls for jalepenos.

My specialty.  Unfortunately if I told you the secret ingredient I would have to kill you!!
Seriously it is very easy to make great salsa.

3 Large tomatoes (home grown is 10x better)
1 large RED onion
Alot of FRESH cilantro (this is a key ingredient if you like it)
Salt and pepper to taste

Here is the very simple secret to good salsa:
8-12oz Enchilada sauce
Put in fridge for AT LEAST 2 days (2 weeks is even better!!!)

Hot? Simple: Habanaros seems like they would be best, HOWEVER, the longer it sits the hotter it gets.  Solution: Add Daves insanity sauce to taste. [url]www.davesgourmet.com[/url], make sure it's the original insanity, it will add the heat without ruining the salsas taste.

Follow these directions and don't tell your friend the recipe!!
....and remember LET IT SIT (stir at night) in 7 days it will be AWESOME!!!!

1 can (10 oz.) Ro-Tel whole tomatoes and green chilies, drained and cut up

1 bunch green onions, thinly sliced

1 large tomato, chopped

1 teaspoon salt (optional)

Juice of 1 1/2 fresh limes

Combine all ingredients. Cover and refrigerate 5 to 6 hours. Makes about 2 1/4 cups (hint: add fresh chopped jalapenos for heat)

Second Version:

1 10 ounce can Ro-Tel tomatoes and green chilies (chopped fine)

1/2 bunch green onions, tops too, chopped fine

1/8 teaspoon lemon juice

1/8 teaspoon garlic salt

Dash of salt

Dash of black pepper

1/8 teaspoon cilantro

Same hint about heat applies here, too.

Mix ingredients and chill.

Nukles and Jim_Dandy's recipes sound good...but without jalapenos, there just isn't much "bite" They're a necessary ingredient..Add them, and the above recipes will be great!!
