TheNewOrleansChannel.com NEW ORLEANS - The famous Baumer?s food sign and plant that is visible from the Pontchartrain Expressway may not be there much longer. Baumer, which bottles Crystal Hot Sauce and other famous condiments, announced that it?s leaving New Orleans after more than 60 years. Alvin Baumer Jr., the owner and plant president, said he?s moving out of Orleans Parish after 5 feet of water inundated the Mid-City plant. Baumer won?t say where the new plant will be located, only that he?s been looking for a new location for the past year. |

I'll be taking bids on my supply of "pre-flood" Hot Sauce. The price has now tripled tho. I have to be careful or the feds and libs might try to bust me for price gouging.

Not to poo-poo on the parade, but I have never understood why anybody would use anything other than that sauce prepared on Avery island. Crystal? Ha, I scoff.

I'll take Franks Hot Sauce everytime, I want something more than just heat and vinegar of Tobasco and something thicker and tastier than Crystal. No choice when making wings the way hotwings were invented.

Crystal isn't the hottest or zestiest, but it's like salt and pepper. A great taste when you need a little twang.

Louisianna brand is the shit
 It's cheaper than Tobasco and tastes a bit better IMHO. Tobasco is way overated...it is just cheap hot sauce...the rest is marketing. Hot sauce on tacos...no lettuce...just a shell, meat, and hot sauce..

Make your own Crystal type hot sauce. Steep vineger, pour into bottle with peppers. Let sit one month in fridge, viola!

I work at a grocery store in IL; for quite a while after the flood we got in NO hot sauce except the "gourmet"/Mexican-stuff. Now we are getting in the generic store-brand, but still not getting Crystal at all. I dunno where the generic stuff is coming from, will have to look at a bottle today.

Property is selling like crazy on the Northshore( especially since the Northshore is above sea level). A lot of companies are moving from New Orleans to the Northshore. Good news that this side of the Lake Ponchatrain, the economy is going to boom. I still see lots of Crystal in local stores. I guess they are keeping the last of the stock in Louisiana. For those that didn't know Tabasco makes a Habanero version for the brave. I find Crystal is better for cooking and putting on top of red beans and rice. Tabasco is best mixed with cocktail sauce for the oysters on the half shell. The mexi- sauce is best poured down the drain for being too watered down.
