5 pounds of flank steak, rubbed with worstershire sauce and Texas BBQ Rub.  Smoked for about 3 hours at 225*






Minced garlic, add to taste
3 tablespoons chili powder
2 teaspoons ground cumin
3 tablespoons all-purpose flour
1 tablespoon dried oregano
2 cans beef broth, divided
1 teaspoon salt
1/4 teaspoon ground black pepper



Cut or tear the meat into roughly 1-inch chunks.  Add all of the ingredients, reserving half of one can of broth.  Simmer 90 minutes partially covered, then add the rest of the broth and simmer about another hour.  Add more flour to reach desired thickness.

It wasn't too expensive.  The great thing about cooking low and low on a smoker is that the toughest cut of beef become very tender and yummy.  

Some friends and I have a chili competition every year for bragging rights.  They still haven't learned that ground beef will never, ever take the place of properly seasoned and cooked beef.

Haha.  I work with some Texans, and we were talking about chili one day and arguing over whether or not it had beans.  He said "no, that's chile con carne!"  I about died laughing.
