From what I remember from Food Handlers class, 4 hours at temperatures less than 165 degrees and more than 40degrees. But if she wants to make a fresh one before that, whenever she wants.

Overnight is good if eaten by like lunch. I wouldn't venture must passed that.

Over night is fine. Think of it as natures way of cleaning you out.
To avoid any possibility of bacterial contamination, reheat it well. You really should refrigerate your leftovers. |

Overnight is fine. Just nuke it for about 15 seconds. I eat whatever I didn't finish the night before for breakfast. Haven't gotten sick yet.

leaving it out is no big deal yell i have left pizza out for 2 days and eaten it and not gotten sick it wont kill you.

Correct Answer. The unsafe temperature zone is <140F for hot foodsand >40F for cold foods. Food must be heated above 165 before serving but it is OK to hold it at 140F but no longer. When you get outside of this range bacteria grows to dangerous levels in 4 hours. Dangerous levels. Yes, I can eat pizza off of the coffee table the next day but you are taking a chance.

+1 Done that many times. Pizza tastes the best when reheated after a couple of days sitting at room temperature. I've never gotten sick. |

If closed in it's box, which is a sealed disease barrier, up to 36 hours. If said closed pizza box is placed under a couch, to be utilized later, 72 hours.

Depends on what's on it, I suppose, but a sausage & pepperoni left in the box on the counter overnight (breakfast of champions - cold pizza and warm Coke) has, over the course of two decades, never harmed me.

Point out to your wife that if leaving pizza out overnight and eating it was dangerous, entire generations of college students would be DEAD.
Besides, only REAL food spoils when you leave it out. What most chains sell as "Pizza" doesn't even have 'real' cheese on it. And the acid in tomato sauce ain't exactly a hospitable place for germs. |

Shit, if left out overnight killed a person, I'd have been worm-bait long ago!
Many a morning while I was stationed in Germany that a cold piece of pizza and a Pepsi was breakfast. Just as Chrome1 said, it's the breakfast of champions! Seriously though, I've left it out overnight, but usually I'm the one to put it in the fridge after we've finished eating it. Many a leftover pizza has fallen into the "tomorrow's lunch" category, especially as you can nuke it easily. |

Modern man's digestive tract must be incredilbly weak.
Imagine the near rancid food that was eaten regularly before refrigeration. All of that smoking and pickling helped, but there is no doubt that most of us would literally die if we ate what people ate just 200 years ago. |
