Depends on the size of the fryer.  Most I've seen are good with a max of 16-18lb.  Just remember, and extra few minutes in the oven is no big deal, but an extra few minutes in the fryer can go from perfect to overdone.

I think it was 3.5min per pound, whatever was written on the pot.  Don't ever go over that, can go under it a little, too.

I don't thaw my turkey before frying.  but I also have a pot that can hold 10 gallons of peanut oil, and an engine hoist that I use to lower the bird slowly
