went to a ball game yesterday. bought a couple of hot dogs,  the dog came sailing over a few heads, money passed thru a bunch of hands to reach vendor. there was only a mustard package. i yelled to the vendor for ketchup.  guy looked at me like i was crazy,( maybe it was the long hair and tatts). anyway it started a small "argument" with people sitting in my section about mustard vs ketchup on their dogs.

No ketchup at the ball game, only at home.

I like tabasco or Frank's red hot on mine, as well as mustard and relish.

Chili, onions, ketchup, and mustard if available Tabasco!  The Chili is dual purpose I like it and after a little churning in my gut  those surrounding me don't!

You don't know hot dogs.

...and all it needs is a bun and some yellow mustard.
But you know condiments.

Good hot dogs (Nathans, Thumans, Best, Sabrett) are best enjoyed with just a bit of spicy brown mustard.
Sometimes chili and onions are good.
And Rutt's Hut, in Clifton NJ, has a nice yellow relish.
But a true afficianado eats his dog with very little condiment, preferably mustard.

Hot Dog cooking techniques:

1) Grill/gridle

2) deep fried

3) water dog


The Nathan's at Coney Island has the best Hot Dog on earth.
There are then hundreds of others that come in second.

First you heat up some dogs, lightly steam some buns. Place the dogs (Nathens are excellent) on the bun, slather with yellow mustard, nothing fancy, sprinkle on some finely minced onion . . . and then add this:

WV Style Hot Dog Sauce

    1 cup - finely chopped onion
    5 pounds - ground beef
    1/4 pound - ground pork
    1 tablespoon - black pepper
    1 tablespoon - salt
    3 tablespoons - chile powder
    4 tablespoons - crushed red chile pepper (medium hot)
    1 32 oz. can - tomato sauce
    1 14 or 15 oz. bottle - ketchup
    1 small can - tomato paste
    1 tablespoon - olive oil
    1/4 teaspoon - cumin
    1 dash - Tabasco sauce

    In a large pot, saute the onion the olive oil until tender but
    not browned. Crumble the raw hamburger and ground pork and add
    to the pot. Cover with water and cook for 1 hour, uncovered, adding
    more water if necessary. Add the remaining ingredients and cook,
    covered, over low heat, just simmering, for two more hours.

    If you wish a thinner sauce, add more water half way through the
    final two hours. For thick sauce, cook down, uncovered for a while
    longer. This recipe makes a hell of a lot of hot dog sauce, so we
    freeze it in small lots and then microwave to thaw.

Sabretts, Hebrew Nationals, high-end national barnds, in that order. If the dog is a good one, most condiments only sully it. I will put cheese and/or chili on a dog, but that's it.

....and "skinless" hot dogs are just wrong.

Part of judging a good hot dog, aside from taste, is the "snap" as you bite in.

At Rutt's Hut, when you order one of their deep fried dogs, there are different categories:

"Hot Dog" -cooked.

"Ripper" -cooked until the skin cracks open

i just cook mine over an open fire and thats all i need for a good tasting dog. so far Nathans Bigger Than The Bun skinless beef franks have tasted the best. talk about mouth watering.

back to my bowl of shredded wheat now...

I enjoy the Chicago style, "drag it thru the garden".

But otherwise, I'll take a dog boiled with just about ANY mustard on it, though I particularly enjoy the Beaver Brand Hot Sweet Mustard.

Grilled dogs just do not taste right. I can accept them nuked.

Ketchup DOES NOT BELONG on a hot dog unless you're under 7 years old.

Guldens mustard and some nice warm kraut.

Sabretts are good, Nathans of Coney Island are great, but the Heb Nat'l that u buy by the pound that still come on the strings like in the Carnegie or 2nd ave deli are the best.

And u can forget Papaya King in NYC

Boiled, fried - brown mustard, coarsely chopped onions, and relish.  Important to put the mustard and onions together on one side, and the relish on the other.

Roasted over a campfire - I'm with Dagger, needs nothing.

I go for Hatfield, but that's an eastern PA thing.

Oscar Mayer the only hot dog fit to eat?  Holy shit man.

Now, I'm a BBQ fed Texas boy.  But I'll tell you something.  BEST damn hotdog I ever had was when I was in (gasp!) NYC, at the local Sabrett's cart.  I dunno why.  They're just damn tasty, and make Oscar Mayer taste like crap.  

As far as store bought dogs go, I'll stick with Hebrew National, or Nathan's (although, Costco carried huge vac-pacs of Sabrett's hot dogs... they don't anymore around here [:'(].  They're good stuffs.

Celery Salt

Throw in an order of onion rings and a cold beer to wash it down.  That's livin!
I miss living closer to Chicago.  It's amazing how hard it is to find a decent hot dog just 60 miles West; what I wouldn't do for a Portillo's!  A place had opened near me for a little while, but they closed.  15 minutes to get a hot dog and fries??  They did have a funny story though.  Someone once ordered a "Chicago Style hotdog", with catsup only.

Catsup and relish.

Traditional Boston Irish hot dogs.

(Serves 1)

Boil 2-3 Fenway Franks for 10 minutes.
Drain water and cut dogs into bite size pieces.
Return dogs to pan and add 1 small can of B&M baked beans.
Simmer on low heat and stir occasionally.
Once beans begin to bubble, remove pan from stove.
Dump contents of pan on dinner plate.
Add generous amount of catsup to dogs and beans.

Mustard, onions (raw only, NOT steamed), and relish.  May add or subsititute Horseradish as available.    NO ketchup...he was right to look at you like you were crazy
Also works on half smokes, or any other similar style of food product.  (Brats, etc).

I like "NATHAN's" on a steamed hotdog bun with spicy brown mustard and some diced raw onions

sometimes I like my Nathans with a lot of relish and a bun

I mostly boil my hotdogs but sometimes I heat them on the grill during BBQ's

I dont usually put ketchup on hotdogs but I like it on my hamburger, I dont put mustard on a hamburger

Something I forgot.

The "secret sauce" at the Milaukee Brewers games kicks ass also. Looks like mayo and may be based on mayo, but it tastes completely different. Pretty good on dogs, nothing tastes better on brats.
