Smoked a goose today. Bird was about 10lbs/$30.00 at the grocery. I overcooked it a bit, but the meat was truly excellent (partly because goose is very moist and smoking is very gentle). Problem is, the bird yielded just enough meat to cover an ordinary dinner plate about 2" deep at the center and tapering to the edges. I figure the net cost (not counting wood for the smoker) was somewhere between $8 and $15 a pound.

My conclusion: henceforth, I will cook goose only as display of wealth - next time I'm wealthy.
