What the best pancake mix? I can't find anything that is even as good as Denny's pancakes.

Daily Chef at Sam's Club.
Best mix I have fund and  have tried all of the usual suspects on the grocery shelf. It's a big bag, but good taste to me.

That company makes some pretty good 'out of the box' shit.

Their cranberry/blueberry muffins are awesome and their cornbread mix isn't all that bad, either.

That being said, I've made all of the above from scratch with pretty good results and the recipes are pretty basic, however, working with flour can be messy if you're already a slob.

With any mix I use, I always add lemon juice and baking powder. It makes the pancakes fluffier and they seem to brown better and crisp around the edges.

The go to in my house is Bisquick. Use the Ultimate pancake recipe. I just tried the Kodiak cakes from Costco and was pretty impressed.

Bunch of nancies not making stuff from scratch...

We usually make a 6x batch on Saturday morning of the following:

1 cup flour
1/2 tsp salt
1/2 tsp baking soda
1 tablespoon sugar
1 egg
1 cup buttermilk (use the good full-fat stuff, not the garbage non-fat buttermilk
1 tablespoon oil
Little bit of vanilla if you want it

Can also add ricotta cheese and blueberries to the mix, which is awesome. Use the fresh-made whipped cream below and Maple syrup on them
Or chocolate chips (and whipped cream below)
Or cinnamon and diced apples and make some homemade caramel sauce.

Make up some fresh whipped cream by using heavy whipping cream, sugar, and a little bit of vanilla and/or a dash of cinnamon to the cream before whisking, too, which is delicious.

pioneer pancake mix works well for me.

I have used some of the others and that seems to make the best out of the box.

I will sometimes add a bit of butter milk to help with the taste / flavor.

I mostly use the Pioneer to make biscuits, or as the flour part in my version of shake and bake batter when I cook chicken.

It's how you prepare them, not necessarily the mix. That said my wife uses hungry jack

Key to a fantastic flap jack is vegetable oil

Bring a little vegetable oil to temp and pour the batter in.

End result is a fantastic flap jack with a minor crunch outside and super soft inside

Not quite 4 ingredients but concur with the concept of making from scratch

2 cups all-purpose flour
3 tablespoons sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 ¼ teaspoons kosher salt
2 ½ cups buttermilk
2 large eggs
3 tablespoons unsalted butter, melted
Vegetable, canola or coconut oil for the pan

I make my own.

It stemmed from my lactose intolerance issue. Almost all on the shelf mixes contain milk products.

My shit is good. Flour, eggs, sugar, salt, baking powder, oil, almond milk and vanilla extract.

sourdough starter
little oil
little baking soda
little salt
couple whole eggs

The flour, buttermilk, sugar, and starter have to work overnight so it's a little hard to spontaneously decide to make pancakes or waffles.
