Going off the low carb \ paleo diet. Cold outside and have a hankering for ham and beans.

I have always used dried White Northern Beans.

Does anyone use anything else ?

I use a mix of small whites, northern, and/or baby lima beans.

Instead of regular ham, I get the shanks and use at least one can of chicken broth in the liquid.

I use Northern beans with ham but I usually make (smoked) ham hocks with Pinto beans.

White limas.....soak them overnight, then bake them in the over with some nice chunks of slab bacon.

Red beans, pref Camilla brand. I just call it "redbeans" and it is served with rice, french bread, and cold beer. Not sure of what this yankee dish you speak of is...

There are Anasazi beans, which are like pintos only better.  Taste better, cook faster, don't need soaking overnight, plus much less gas.  I grew up on pinto beans, and Anasazis are now my default beans.  If you can't find 'em in your grocery, go to anasazibeans.com and order some.

Lentils are great with ham.  If I'm looking for a quick fix, I'll use a can of B&M baked beans, throw in some cubed Jack Cheese, and chow down.
