As much as I love beef I'd go for chicken for versatility and pork for value.

How can you go wrong. Next best would be pork as it's a larger animal but chicken is what? Breast, drums, thighs and wings. Sure you can mix that with a lot of stuff but that's all it is. Fish though, if it's any fish, that might be the way to go. Between fresh water and salt water fish you'd have plenty to go between.

I enjoy steak a lot.  I like a good pork roast or some bacon.  Heck, I even like a good chunk of blackened fish once in a while...

But I could eat hot wings every single day of the week.

Pork, because more parts of it are tasty.  A huge part of a beef is round, which is just .  The same part on a pig is ham, which is scrumptious.  Pulled pork > brisket, pork ribs > beef ribs, lard > suet.  Rib roast is great, better than the corresponding part on a pig, but on the whole, pork is better.

Today was bacon, chicken,  then smoked salmon
Yesterday was bacon,  sushi, chicken,  beef, then chicken
Monday was bacon, chicken, then beef and chicken

Most weekdays are like that
