Bought a nesco dehydrator because of a beef jerky thread here on ARFCOM. Tried different recipes posted. What I found was the nesco "original seasoning" was hard to beat, bought a bunch of it. I add some cayenne, worchestshire sauce, molasses, red pepper and black cracked pepper to add to the flavor profile and heat it up a little.



Eat a half a dozen pieces and feel like shit. Happens everytime. It's addictive but you need to eat just a small amount at any one time.




I'm assuming its the jerky cure that makes you feel blah? Anyone else run into this?

I once ate too many Slim Jims and Oreos.  Yakked.  It was gross.  

I haven't eaten a Slim Jim since then... it's been 20 years.

It's not really a stomach issue, its like a chemical poison issue for me. Makes me feel a malaise of sorts.

I'm not sure, I'm certain it's proprietary, it's Nesco brand. I know for sure nitrates (cure) isn't good for you though, I'm assuming its the culprit.

There is such a thing as "drunk on meat"

Eat enough ribs in one night, with too little water, you'll wake up in the morning feeling exactly like a hangover.  You might even be in a bathtub of ice.

not quite beef jerky, but when i was ~12 i did get myself all stopped up after eating an entire rope of that beef stick in a rope loop stuff, kinda like the slim jims, only in a two foot coil? yeah, ate a whole roll of that, and a can of easy cheese.
didn't 'get moving' again for a few days

I do the lean hamburger, mix the ingredients and shoot it from a jerky gun into strips. It's easier for us old folks to eat. ;)

Thats what I do and use the same cure/spice as you, and have none of the sick feeling symptoms that you describe.

Find a local Asian grocery store, or order online. Get Maggi brand 'seasoning sauce' (it is soy sauce)

Give it a shot, Maggi has way more flavor than Kikkoman.

Never an issue myself, but for about a year, it was my daily breakfast before going out for a Repo.

Saw a "Oberti" style jerky dispenser in a random gas station yesterday, i was instantly brought back to my repossession days.

The storebought stuff is WAY too expensive for me to eat myself sick (I could easily clear $75 if I was hungry enough ), and I don't use prepackaged anything when I make it at home.

I haven't tried making my own beef jerky, but I'm inclined to perhaps try making venison jerky one of these days. Speaking of beef jerky, OH MY GOD when did the price of beef jerky skyrocket? I haven't bought beef jerky in ages and was on a trip and thought I'd buy a bag to snack on. The bigger bag (big enough you could fir your whole hand in it) was like $12! They had a smaller bag (maybe half the size of the larger bag) and it was like $5! Last time I bought beef jerky the big bag was maybe $3.50!

I made about 4 pounds of it (dried product) Sunday and it was gone by yesterday. I feel fine, maby a little gassy .



If you are having gastro problems cut out the pre packaged additives and just use pepper, soy, worstechire, ect. Careful on the soy, a little adds a ton of salt especially if you are marinating overnight.




I'd fucking kill to have a hunting buddy, I'd make jerkey and sausage sticks like nobody's business.




Does everyone here dry at 160+ or do any of you dry at lower temps? I stopped using cure for stuff I eat in a couple days but I know nothing about lower temperature feasibility.

I'm going with MSG. That shit makes me feel awful.

ETA: Do some research on that shit. It's HORRIBLE for anyone. It causes all sorts of problems, and is built up over time in your body.
