just a regular ole boring turkey samich .

start with a 22 lb turkey brined in salt water for 8 hours.



mix a dry rub of italian seasoning, salt, and garlic powder



coat the turkey with red wine vinegar and extra virgin olive oil, and the rub



roast for 3.5 hours and bam, turkey goodness



then comes the bacon



nice and crispy



start with lightly toasted wheat bread and turkey



top with stuffing ( sorry , wasn't homemade )



top with a piece of crispy skin and red onion



then with chunky cranberry sauce



bacon , and cranberry mayo





hit it with some tater tots



enjoy

Op, I think I'll make one of those tomorrow. Tonight I roasted two boneless turkey breasts in lemon, white wine and mirepoix. We had a small foil loaf pan of stuffing in the freezer from Thanksgiving. All I'm missing is the cranberry sauce.

I just don't think of sandwiches as dinner. As leftovers for lunch maybe but it seems like a lot of work to cook a turkey just to make sandwiches.
