At the risk of uttering blasphemy, I'm starting to think that Kimchi > Sauerkraut.
Had it on some venison burgers a couple nights ago, and I haven't stopped finding new places to substitute kimchi for Sauerkraut since. My kids, who are complete wimps when it comes to spicy foods, are loving it, as well. Here's a very entertaining vid on the production of Kimchi. I never realized it was this labor-intensive.

Kimchi is a staple at my house (Korean wife), and I've been eating it for 35+ years. I love it. But, I don't see the two as interchangeable. Two different "tools"... Brats, hot dogs, smoked pork, etc. -> sauerkraut is the king!!
Kimchi is fun to add to a lot of foods, though.  |

SO and I love Korean food. The nice thing about kimchi is that it gets spicier as it ages. SO likes it less spicy than me so we have two containers, one fresh and one aging.

Radish kimchi is awesome...married to a Korean for 10 years...now an Ex.

They each have their calling. I have home made kimchi in the fridge, it's well aged now. I haven't done much korean cooking in months despite having pork and beef bulgogi cuts in the freezer. Need some marinade I guess. I have Aldi's sourkrout in the fridge for hot dogs and such. I have a whole row of cabbage in the garden. Hopefully I get a good harvest and can make a 5 gallon bucket of it for this winter. |

I've tried Kimchi and I can't eat it--it's nasty. I like sauerkraut, though. Grew up eating it.

This is correct. Each has their place. I'll say I can eat a lot more sauerkraut than I can kimchi before I'm impossible to be in the same room with.

As for the OP, I love both, but they're not completely interchangeable. I agree that they're both great tools that have their own times and places to be used. |

The thing with Kimchi, is that there isn't just "Kimchi", as if it were a basic dish that people added their own slant to, like coleslaw, there are many types of distinctly different Kimchi, some are very mild and unfermented, others are very spicy and heavily fermented, most are in between. Some could easily be substituted for a variety of western cabbage based dishes, some are very, very distinctly Korean. Once again, some I liked a lot, some I didn't care for at all, just as Koreans raised on Kimchi three meals a day will love some types, and hate others. Unlike most guys assigned to Korea in the Army, I made a point to learn as much of the local customs and culture as I Could. Of course that meant that I had to avoid the bars with the juice girls, and little SOFA clubs that catered to GI's. I made some friends, and learned a lot. That said I was glad to come home, Korea in the mid nineties was an interesting place, a country recently risen up from third world, but not quite an affluent nation yet. |

they have vastly different applications, like a shot gun and a rifle. like beer and liquor. as a garnish, Kim Chee is superior. as a component, Sauerkraut has more applications. I just can't foresee putting Kim Chee on a perfectly grilled hot dog or sausage. |

I love kraut but absolutely hate Kimchi. I tried it for the first time over in South Korea, they serve it with every meal over there at the places I ate. I gave it a chance figuring one place or another may ruin a good recipe but never found any I liked.

I eat Kimchi because you get it with every meal anyway and it's probably good for you, but I've never liked it. It also looks like something you don't want to eat; it's just ugly as food goes.
