Well, given the recent dinner pics around here I felt someone needed to step in and stop the bleeding. This was nothing spectacular, just a Thursday night with the wife and the Big Green Egg. Yesterday I picked up the ingredients and made the dough.



First things first, I had to get the Egg up to temp. I use natural lump hardwood (Royal Oak) which is rebranded Big Green Egg lump, and much less money. I use a heat gun I found still unused in the box in my neighbors trash (he also was throwing out a bunch of NIB tools which I grabbed). The heat gun works great to light the egg.



While i was waiting for the grill to get to 600, I prepped some toppings. Last night was garlic chicken with ginger sweet potato and spicy mango kebobs, so I chopped up the leftovers.





The wife asked to try putting one of the pizzas on the grill so I gave her a shot.



The first one is always the worst because you are getting back in the groove/heat is stabilizing etc. For that reason, I used the only meatless option as a tester.



Potato, rosemary, ricotta, truffle oil, mozzarella, and pepper flakes.





The wife put some extra truffle oil on after it came off the grill.



Next up, buffalo chicken with blue cheese, blue cheese dressing, onions, and celery.



Then came the garlic sauce, cheddar, and PA made kielbasa pizza.



Finally the spicy mango, sweet potato, garlic chicken, onion, BBQ sauce (Maull's).



I present, my dinner.





Food: 4 pizzas, scratch made dough, no tomato sauce because we always make regular pies and wanted to change it up. Super thin crust, all made on the egg.

Drink: combo of Uinta Hop Nosh IPA and Trader session IPA. Bulleit Rye for dessert.

Firearms: Walther PPX with TiRant 9mm can, .30 cal M1 my Dad gave me last week with the story it was a paratrooper rifle from WW2 that some old "curmudgeon" gave him because he had no family. Not sure of the authenticity, but I was/am thrilled just the same.

Blade: Tier 1 tactical pizza wheel, Global 8" chef's knife.

Stolen from this site. I add about 10 grams of sugar as well.

By Weight
500gr Molino Caputo Tipo 00 flour
325gr water (65% hydration)
10gr salt
3gr active dry yeast

We highly recommend cooking by weight. It is fast, and easy to get the exact hydration (water to flour ratio) and dough ball size you want. Personally, I do not use recipes or a mixing cup when I cook dinner for the family, but pizza and bread dough is different. Being exact counts, and nothing works better than a digital scale.

Mix the dough in a stand mixer, by hand or in a bread machine. If you are using a stand mixer, mix it slowly for two minutes, faster for 5 minutes, and slow again for 2 minutes.

Cover the dough and let it rise for 1 1/2 - 2 hours, or until double. Punch it down and push out the air bubbles. Form the dough into a large ball, then cut it into three 275gr equal pieces.
