Do any of you make meat sticks? Whats your favorite spice combo? I tried doing pepperoni and mozzarella on a 22mm casing and it was pretty damn good.. Was a big hit as a gift at Xmas. Getting ready to stuff 20 Lbs this weekend. that might last a week..

Yes. I  have a family recipe that was handed down. It's very similar to andouille in spicing.

Which reminds me, I'm running out. Like you, a lot of it was given as gifts. No $20 Pepperidge Farm sticks here.

i used the Hi-mountain pepperoni kit. then I add a tlb spoon full of red crushed pepper flakes and a tbl spoon of paprika. it seems to be just right in the spice dept.

My family makes 100% venison sticks, so much better than any blend I've ever had.  Down side is that this season we didn't get any deer.

Whatever you want. It's a little different than jerky, since it's not thoroughly dried.

It's marinated in a vinegar based spice "mud" over night. I used salt, pepper, and green chile rub, but a lot of recipes call for coriander too.

i just use the seasonings and cures that come with the kit with the casings..   pretty good selection ..  and convenience is great.

Biltong starts with thicker pieces of meat (I use venison for all my biltong and droewors but beef works too) than jerky.  Gives it a totally different texture and taste imo.
