I had some German Kartoffel salad today at the Westin Kierland here in AZ. It was the best I’ve had yet. They had pea size chunks of smoked ham in it. YUM!!!!!

Put the spurs to it (high flame). Toss the chopped bacon into a cast iron skillet, med flame. When the potato water starts boiling, set your timer for 10 min. They're done when the God damn thing beeps at you. Bacon: You're going for something between chewy and crispy. Adjust the heat accordingly. It should be just about done, by the time the potatoes are done. When the potatoes are done (beep! beep!), dump them into a strainer, in the sink. They'll be fine (and hot). Pour the bacon bits out of the skillet, into the now-available cast iron dutch oven (leave the heat off, for now). Brown the diced onion in the leftover bacon grease, in the cast iron skillet. Med flame. Add butter or reserved bacon drippings as needed, to keep them from going dry. Pour the onion into the dutch oven, already holding the bacon. Put the spurs to it (high heat). Add the sugar, vinegar, parsley, salt and pepper to the dutch oven. Stir that shit up, and let it come to a boil. Dump the potato in, from the strainer. Heat through. Stir and shit. Serve. Post on arfcom. Enjoy. |

Growing up my family was real good friends with a First generation German family that had been here for a little while. The mother in that family always made us German potato salad. It was hands down the best I ever ate. Unfortunately she has passed, god bless her. I couldn't understand a damn thing she would say to me, so I just nodded my head yes to her and waited for her to feed me. One of the best cooks in my childhood.
